Easy Beef Roast

A set it and forget it Beef Roast recipe with flavors you won't forget!
Cuisine: American
Keyword: gluten free, slow cooker
Servings: 6

Equipment

  • Slow Cooker

Ingredients

  • 1 large sweet or yellow onion
  • 1.5 pounds potatoes russet, red, or gold
  • 3 whole carrots
  • 8 ounces mushrooms button or cremini
  • 1 tsp ground sage
  • 1.5 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 2 tbsp coconut or avocado oil
  • 3 pounds beef chuck roast boneless
  • 2 packages brown gravy mix your favorite brand! Gluten free if you desire

Instructions

  • Set your crock pot to HIGH for 6 hours or LOW for 10 hours. I personally find that I get a more tender finished product if I set it to HIGH.
  • Peel and rough chop the onion, add to the crock pot
  • Peel and rough chop the carrots, add to the crock pot
  • Peel and rough chop the potatoes, add to the crock pot
  • Wash, dry, and quarter or half the mushrooms depending on their size. We are going for bite sizes here! Set aside for use later.
  • Gather your seasonings and in a small bowl mix together the ground sage, salt, black pepper, and garlic powder.
  • Add half the seasoning mixture to the top of the veggies.
  • Unwrap your roast, and dry it off with a paper towel, absorbing any extra moisture.
  • Add the other half of the seasoning mixture to both sides of the roast
  • In a large cast iron or stainless steel skillet heat on HIGH the coconut or avocado oil
  • PAUSE—turn your suction vent on as high as it goes, maybe open a window, and inform loved ones that the smoke detector might go off and that's fine because it's "Roast for dinner!"
  • Add your seasoned roast to the skillet with hot oil, searing for 3-5 minutes on each side, flipping as needed. You could skip this step, but this sets your seasoning into a crust on the meat and really gets the flavors going. It's worth the smoke detector yelling at you.
  • Add the roast on top of the seasoned veggies and put the lid on. You should have about 5 hours and 40 minutes left on the clock now.
  • 1 hour before the 6 hour time is up, open the crock pot and add the mushrooms in. I like to nestle some under the meat, and then push others down into the liquid that's formed with the other veggies.
  • When you're ready to eat, open the lid and using a slotted spoon transfer the meat and veggies to a serving platter or a glass dish that has a lid (think 9×13). Cover the platter with foil or put the lid on the glass dish.
  • CAREFULLY use oven mitts and pour the remaining liquid from the crock pot into a measuring cup. I normally get about 1.5-2 cups of liquid. Don't strain or skim the fat, the gravy needs it!
Read your gravy packages and use this liquid plus more water to make the gravy on the stove top in a pot.
  • Call the family to enjoy some roast, veggies, and your "semi homemade" gravy!
